Two Rivers Altitude Sauvignon Blanc presents a remarkable progression in style. The grapes underwent meticulous thinning, allowing only one bunch per shoot to enhance concentration and flavour. Following hand-picking, they were gently pressed into 7-year-old hogshead barrels for spontaneous fermentation. The wine then matured on full yeast lees, undergoing regular stirring for a period of 10 months, resulting in a beautifully textured and complex final product.
