Benefiting from exposure to the cool morning sun, this wine showcases remarkable elegance while highlighting its distinct minerality and richness, derived from the region’s calcareous and clay subsoil. Produced in Burgundy by SAS Louis Moreau, this Chablis is crafted exclusively from 100% Chardonnay grapes. The 1er Cru Vau Ligneau parcels are hand-harvested, like all the estate’s 1er and Grands Crus, with picking occurring slightly later than the 1er Cru Vaillons to allow for optimal ripeness. Fermentation takes place in stainless steel tanks, beginning with a 100% alcoholic fermentation using natural yeasts at a low temperature of 18°C for 15–18 days, followed by malolactic fermentation with natural bacteria at 20°C for several months. This meticulous vinification process ensures the wine retains its characteristic purity and depth of flavour.

Aging takes place in tanks on fine lees for at least six months, with weekly pumping over to enhance texture and complexity. After racking to remove gross lees, the wine is fined before undergoing cold filtration and bottling. This final stage is done tank by tank, with the remaining wine kept in tanks for at least 18 months to preserve its freshness and balance. The result is a beautifully expressive Chablis 1er Cru, perfectly embodying the elegance, minerality, and richness that define the wines of this prestigious terroir.
