After a traditional fermentation process, the wine is aged for 18 months, enhancing its depth and structure. This meticulous winemaking includes de-stalking the grapes, alcoholic fermentation at high temperatures (28°C) with daily pumping over, followed by a long maceration period of four weeks, and completed with malolactic fermentation.
