Rimon Winery is the exclusive producer of the world's only 100% pure pomegranate wine.  Since 2003, father and son, Gaby and Avi Nachmias have been producing a unique pomegranate wine from their orchard located on a mountain in Upper Galilee. 

The traditional techniques used by the Nachmias Family to make the Rimon pomegranate wines are virtually identical to the traditional methods of making grape wine.  The fruit is harvested at optimum ripeness and crushed, then moved into large temperature controlled steel tanks to ferment.  After fermentation, the wine is then aged in French oaked barrels to add complexity and softness.  The only difference is in the machine that crushes the fruit.  The Rimon winery uses a specially designed machine to open each pomegranate into a flower-like shape, scoop out the ripe, edible seeds and crush them for their rich red juice.  Rimon Winery has used this technique to produce 3 very unique and unforgettable wines.

The Rimon Dessert Wine

The pomegrante fruit for this wine was harvested at the peak of ripeness, resulting in a full-flavoured, soft, harmonious wine.  Its natural sweetness is retained by interrupting the fermentation process with the addition of a quantity of alcohol (also produced naturally from pomegranates). It was then aged for 10 years in French oak barrels to give the wine depth, roundness and a remarkable taste and colour.  This is a sweet, yet light wine with fruity aromas and bright cherry flavours.  Notes of chocolate and lush pomegranate flavours linger on the finish.  It can be served alone or paired with dessets and soft, ripe cheese.

The Rimon Dry Wine

Made using traditional dry wine producing methods, the fruit for this wine is harvested at the peak of ripeness, crushed for its sweet juices, fermented at low temperatures to preserve the fruit flavours, and then aged in French oak barrels for nine months.  It is an elegant wine with a beautiful deep reddish-purple colour and a unique bouquet of rich pomegranate and floral aromas.  It has flavours of cherries with a faint hint of black pepper and a well-balanced, soft finish.  It pairs well with Italian cuisine and other full flavoured foods.

The Rimon Pomegranate Port Style Wine

This unique wine is made using a similar process to that of traditional port producing, with the fermentation process interrupted through the addition of fermented pomegranate juice, resulting in a wine with a high alcohol and sugar content.  It is then aged for 18 months in French oak barrels in Rimon Winery's special aging sun room.
Dark purple and maroon in colour, this wine has a nose of stone fruits and sweet spices.  A full bodied port, it is sweet on the palate, but not overwhelming, with a smooth mouth feel and a delicate warm finish.  It pairs well with cheese appetisers, fruit and chocolate desserts, and blue cheese.
